Okonomiyaki (お好み焼き) & Hiroshimayaki (広島焼き)

Okonomiyaki (お好み焼き) is one of the most popular Japanese food recipes abroad lately. In fact, it is very easy to make even in foreign countries.

Japanese people call Japanese foods made from flour, “konamono (粉もの)”. Bread is not including.

Today, I would like to introduce okonomiyaki.

Okonomiyaki meaning


The meaning of okonomiyaki is “Grilling as you like”. The original form of okonomiyaki was created after the Pacific War. At that time, it was a kind of pastry made of flour mixed in water and just cooked and seasoned, but gradually people add various ingredients such as pork and eggs as they liked.

Types of Okonomiyaki


There are actually several types of okonomiyaki that are usually eaten in Japan.

Okonomiyaki Osaka style (お好み焼き)


Although Okonomiyaki is from Osaka, every Japanese often cook this dish at home well.

Okonomiyaki is a sliced pork, cabbage, red ginger, leeks and tenkasu(crunchy bits of deep-fried dough) mixed with batter made of flour, eggs and water and cooked on an iron griddle.
You can choose ingredients kind a seafood as toppings that you like.

Modern yaki (モダン焼き)


Modernyaki is said to have been born in Kobe in 1950. At Shibata (志ば多), an okonomiyaki restaurant in Nagata-ku, Kobe City, a mixture of okonomiyaki and yaki udon was served.

Nowadays, there are two known methods of making okonomiyaki: one is to lay down Chinese noodles with okonomiyaki, and the other is to sandwich soba noodles between two pieces of okonomiyaki.

Negiyaki (ねぎ焼き)

“Negi” means leeks. Negiyaki refers to the use of large amounts of chopped green leeks instead of cabbage.

Okonomiyaki Hiroshima style (広島焼き)

Hiroshima-yaki is a little different from regular okonomiyaki, is put on and cooked with Chinese noodle.
I prefer Hiroshima-yaki to okonomiyaki, but it is difficult for me to make it myself.

This recipe can be made at home in a frying pan, so I will introduce it to you.

Monjayaki (もんじゃ焼き)


The name “Monjayaki” is said to have originated from the word “Monjiyaki (文字焼き)” which became “monjayaki” with an accent.

“Monji” means letter. It is said to have originated in the late Edo and Meiji periods, when there was a shortage of things to write on, masters taught with letters by flour in water on an iron plate. 

So they named it.

Okonomiyaki recipe

The following ingredients are common ingredients for okonomiyaki.

  • Flour
  • Yam
  • Egg
  • Dashi
  • Sliced pork
  • Leeks
  • Dried tiny shrimp
  • Katsuobushi
  • Cabbage
  • Okonomiyaki sauce
  • Mayonnaise
    It doesn’t need  tenkasu, aonori (aosa) and red ginger.

Hiroshimayaki recipe

To tell the truth, Hiroshima-yaki is difficult to make. If you make a mistake, the flour turns into a mushy mess. You shouldn’t eat it, because it will make stomachache.

This is the only Hiroshima-yaki recipe I’ve tried that didn’t fail! You can make it in just a single pan. Of cource, you can add meat or seafood as you like.

Monjayaki recipe

The seasoned mushy okonomiyaki ingredients are cooked on a griddle and eat peeling off with a small spatula. It’s a strange way to eat.

Okonomiyaki flour substitute


You can buy okonomiyaki flour, but the contents are the same as flour, yum, and dashi.

Formulations vary depending on their recipe.

Okonomiyaki sauce


Don’t warry! You can make it easily!

Simply mix the following

3 tbsp ketchup
3 tbsp Worcestershire sauce
2 tsp honey or sugar
0.5-2 tsp soy sauce*
*It depends on your taste. my favorite is 1tsp.


It was weird to put mayonnaise on okonomiyaki 20 years ago, but now it has become a standard.
Japanese QP mayonnaise uses only egg yolks, making it rich in flavor and delicious. Moreover there is mayonnaise with 80%OFF calories!

People who like mayonnaise are called “Mayolers”. They basically eat everything with mayonnaise on it. On bread, on udon or sushi…

Okonomiyaki restaurants


Okonomiyaki is often sold at food stalls during festivals.
There are two kinds of okonomiyaki restaurants: one where the restaurant staff makes it for you, and another one is by yourself.
They are for couple on dates in Osaka. I did not know about it, so I went there alone. I was laughed by them😣
